How well are the "chill" dead weight jobs suited for mostly self-taught people like myself?

When I mean self-taught, I have a bachelor's degree but it's not in CS. For jobs I usually get the most interest from startups and other smaller companies. But I'm tired of the job instability as well as not being able to get to know people well (in remote jobs). And want to leave for a slower paced job. Then I remember the big old boring companies.
