About the location:
Located on the southeastern coast of the pristine island of Lāna’i, lies the secluded retreat of Four Seasons Resort Lāna’i, an oceanfront destination offering travelers a curated, personalized island escape. The five-star, five-diamond Resort offers outdoor restaurants, including Nobu Lāna’i, a kid’s club, Tennis Garden, cultural programming, beach and pool with spacious seating areas nestled among tropical gardens, Hawanawana spa and luxury retail boutiques. Built on lava outcroppings, the award-winning Jack Nicklaus-signature golf course features ocean views on every hole. Island activities, many managed by Four Seasons include sunset sails and whale watch tours, horseback riding, sporting clays and archery, biking, hiking, and aerial adventures at Lanai Adventure Park or learn about Hawaiian wayfinding at the on-site observatory.
PASTRY COOK I
The Four Seasons Resort Lāna’i is looking for a Pastry Cook I who shares a passion for excellence and who infuses enthusiasm into everything they do. Our teams’ have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required.
WHAT YOU’LL DO
The Pastry Cook I holds a lead position, reporting to the Executive Pastry Chef/Assistant Pastry Chef, and is responsible for supervising the day-to-day running of the Pastry and Bakery department in the Resort. The management of food costs and production control are important to reduce wastage in addition to the culinary training the Pastry Cook I provides for all pastry and bakery 'ohana on a daily basis. Responsibilities include, but are not limited to, the following:

Assist in the coordination of selection, training, development, and evaluation of employees in the Kitchen’s pastry shop and Bakery through effective management and leadership to ensure that established cultural and core standards are met.

Assist in the planning and development of recipes, and ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration. Including, preparing baked goods including breads, breakfast pastries, and other bakery items.

Assist in control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.

Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.

Maintain control systems which will assure quality and portion consistency, monitor food shipments to ensure they meet established purchasing specifications as well and foster an awareness of the importance of food preparation and quality.

Communicate with employees to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

WHAT TO BRING

Successful candidate must possess legal work authorization in United States
-
Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card
-
Ability to stand for extended periods, lift up to 50 lbs, and push/pull as needed during shifts
-
Weekend and Holiday availability required.
-
Solid knowledge of Pastry and Bakery with experience in chocolates and sugar works, and experience in lamination process, artisan breads and healthy bread programs
-
Creativity and flair and the ability to provide guidance to others
-
Able to evidence good business acumen and a strong work ethic
-
2+ years kitchen supervisory experience with a diversity of culinary experience and a proven track record in a pastry shop and multiple outlets
