製造業務に加え、メニュー開発やチームの育成にも関わり、部門全体の品質向上と効率的な運営をリードするポジションです。

主な業務内容

• パン・ベーカリー製品の製造および品質管理
• 新商品・季節商品の企画および開発
• 食材・原材料の在庫管理および発注業務
• 食品コストおよびロス管理による収益性の向上
• 衛生・安全・清潔基準（HACCP）の遵守
• ベーカリーチームの指導・育成およびシフト管理
• キッチンおよびF&B部門との連携
• ブランドスタンダードに基づいた製品の提供

Key Responsibilities

• Prepare and oversee the quality of bread and bakery products
• Develop new and seasonal bakery items in collaboration with the team
• Manage inventory and ordering of ingredients and raw materials
• Control food costs and minimize waste to improve profitability
• Ensure compliance with hygiene, safety, and cleanliness standards, including HACCP
• Train, develop, and schedule bakery team members
• Coordinate with Kitchen and Food & Beverage departments
• Deliver products in line with brand standards

• 高卒以上
• ベーカリーまたはホテルでの製パン経験
• シェフまたはスーパーバイザー経験歓迎
• 製パン技術および商品開発の知識をお持ちの方
• 食材管理およびコスト意識をお持ちの方
• チームをリードできるリーダーシップ
• ゲスト志向で品質にこだわれる方
• 衛生基準を理解し実践できる方
• 早朝勤務を含むシフトに対応可能な方

Qualifications

• High school diploma or equivalent
• Experience in bakery production within a bakery or hotel environment
• Chef or supervisory experience is an advantage
• Knowledge of baking techniques and product development
• Strong understanding of ingredient management and cost control
• Proven leadership ability to lead and motivate a team
• A guest-focused mindset with a strong attention to quality
• Understanding and practical application of hygiene standards
• Willingness to work shifts, including early morning schedules
