各レストランの調理部門において、料理長の補佐として厨房運営全般をご担当いただきます。

主な業務内容

  • 担当部門における調理業務および品質管理
  • キッチンオペレーションの管理・改善
  • 食材の発注・在庫管理・原価管理
  • メニュー開発および季節メニューの提案
  • 衛生・安全管理(HACCP)の徹底
  • スタッフの指導・育成・シフト管理
  • サービス部門・宴会部門との連携
  • ブランドスタンダードに基づいた料理提供

Key Responsibilities

  • Oversee food preparation and maintain quality standards within the assigned section

  • Manage and improve kitchen operations and workflow

  • Handle ordering, inventory control, and cost management of ingredients

  • Support menu development and propose seasonal offerings

  • Ensure strict compliance with hygiene and safety standards (HACCP)

  • Supervise, train, and schedule kitchen staff

  • Collaborate with service and banquet departments

  • Ensure all dishes are prepared and presented in line with brand standards

  • 高卒以上
  • 調理経験(目安5年以上)
  • リーダーまたはマネジメント経験
  • 衛生管理に関する基本的な知識
  • ホテルまたはレストランでの勤務経験
  • 副料理長またはChef de Partie以上の経験
  • 原価管理・メニュー開発の経験
  • HACCPの知識・実務経験
  • チームをリードし、現場をまとめられる方

Qualifications

  • High school diploma or equivalent

  • Experience in bakery or culinary operations

  • Strong interest in bread making and bakery products

  • Ability to work well in a team environment

  • Attention to detail and ability to work with care and precision

  • Strong awareness of hygiene and sanitation standards

  • Availability to work shifts, including early morning hours
