各レストランの調理部門において、料理長の補佐として厨房運営全般をご担当いただきます。
主な業務内容
- 担当部門における調理業務および品質管理
- キッチンオペレーションの管理・改善
- 食材の発注・在庫管理・原価管理
- メニュー開発および季節メニューの提案
- 衛生・安全管理(HACCP)の徹底
- スタッフの指導・育成・シフト管理
- サービス部門・宴会部門との連携
- ブランドスタンダードに基づいた料理提供
Key Responsibilities
-
Oversee food preparation and maintain quality standards within the assigned section
-
Manage and improve kitchen operations and workflow
-
Handle ordering, inventory control, and cost management of ingredients
-
Support menu development and propose seasonal offerings
-
Ensure strict compliance with hygiene and safety standards (HACCP)
-
Supervise, train, and schedule kitchen staff
-
Collaborate with service and banquet departments
-
Ensure all dishes are prepared and presented in line with brand standards

- 高卒以上
- 調理経験(目安5年以上)
- リーダーまたはマネジメント経験
- 衛生管理に関する基本的な知識
- ホテルまたはレストランでの勤務経験
- 副料理長またはChef de Partie以上の経験
- 原価管理・メニュー開発の経験
- HACCPの知識・実務経験
- チームをリードし、現場をまとめられる方
Qualifications

Experience in bakery or culinary operations

Strong interest in bread making and bakery products

Ability to work well in a team environment

Attention to detail and ability to work with care and precision

Strong awareness of hygiene and sanitation standards

Availability to work shifts, including early morning hours
