THE JOB

The Assistant General Manager (AGM) supports the General Manager in overseeing daily operations, financial performance, and team leadership at Koko’s Bavarian. This role is highly operational and people-focused, with accountability for service execution, labor management, inventory discipline, and maintaining brand standards in a fast-paced, high-volume environment. The AGM is a floor-forward leader who coaches managers and hourly teams, ensures exceptional guest experiences, and helps drive profitability through disciplined execution of systems, standards, and KPIs.

WHAT THIS ROLE WILL DO

Operations & Guest Experience

  • Lead daily service periods, ensuring consistent execution of food, beverage, and hospitality standards
  • Actively manage the floor during peak periods (nights/weekends), resolving guest issues in real time
  • Uphold cleanliness, safety, and facility standards across FOH, BOH, and public spaces
  • Ensure compliance with all health, safety, and alcohol regulations (TABC)

People Leadership & Culture

  • Hire, train, coach, and develop managers and hourly team members
  • Reinforce a culture of accountability, hospitality, and teamwork
  • Lead pre-shift meetings, service recaps, and ongoing performance feedback
  • Support performance management, corrective action, and scheduling discipline

Financial & KPI Management

  • Execute weekly labor planning and scheduling to meet sales forecasts and labor targets
  • Support inventory management, ordering, and cost controls (food, beverage, supplies)
  • Understand and help manage key KPIs including:Labor % (FOH & BOH)
  • COGS %
  • Contribution Margin
  • Guest counts, average spend, and sales mix
  • Assist GM with weekly reporting, variance explanations, and action plans

Systems, Admin & Compliance

  • Ensure accurate timekeeping, tip compliance, and payroll submissions
  • Maintain ordering, receiving, and invoice accuracy
  • Support POS accuracy, menu updates, and operational rollouts
  • Ensure adherence to company SOPs and brand standards

WHAT THIS PERSON WILL BRING

  • 3–5+ years of restaurant management experience in a full-service, high-volume environment
  • Strong working knowledge of labor models, scheduling, and cost controls
  • Proven ability to lead teams through busy service periods
  • Experience with beer-forward or bar-heavy concepts strongly preferred
  • Comfortable working nights, weekends, and holidays
  • Strong communication, organization, and problem-solving skills
  • Ability to stand and walk for extended periods
  • Lift up to 40 lbs
  • Navigate busy service environments safely and efficiently
