What will I be doing?The Director of Operations i/c Food & Drinks is responsible for overseeing overall business operations while directly managing all Food & Drinks functions. This role ensures operational efficiency, exceptional guest experiences, profitability, and compliance across departments, with a strong focus on food and drinks service excellence. The position combines strategic leadership with hands-on management, driving operational performance, service standards, and continuous improvement.
Position Summary: Operations Management · Oversee day-to-day operations across all departments to ensure smooth, efficient, and consistent service delivery · Develop and implement operational policies, procedures, and performance standards · Monitor and optimize operational costs, budgets, and resource utilization · Ensure compliance with health, safety, hygiene, and regulatory standards · Analyze KPIs, operational reports, and financial data to improve performance · Coordinate with senior management to align operations with business goals Food & Drinks Management · Manage all food and beverage operations including restaurants, bars, kitchens, and events · Develop menus in collaboration with chefs and bar managers, ensuring quality, creativity, and profitability · Oversee inventory management, procurement, cost control, and supplier relationships · Maintain high standards of food quality, presentation, and service · Implement strategies to increase revenue through promotions, upselling, and special events · Ensure compliance with food safety, hygiene, and licensing regulations Leadership & Team Management · Recruit, train, supervise, and evaluate operational and F&D employee · Foster a culture of excellence, accountability, and teamwork · Schedule staffing efficiently to meet operational demands · Conduct performance reviews and implement training and development programs Customer Experience · Ensure exceptional guest satisfaction across all touchpoints · Handle escalated customer issues and resolve complaints professionally · Monitor service quality and implement improvements based on feedback Financial & Strategic Planning · Prepare and manage operational and F&D budgets · Monitor revenue, margins, and cost control initiatives · Support business growth initiatives, expansions, and new concept launches
Qualifications & Experience
- Bachelor’s degree in Hospitality Management, Business Administration, or related field (preferred)
- 10 + years of experience in operations management, with strong F&D leadership experience
- Proven experience managing multi-department operations
- Strong understanding of food and beverage cost control, inventory, and compliance
- Previous Luxury property experience of +3 years
- Previous Resort Operations of +2 years would be appreciated
- Previous experience in Island properties would be benefit
- French language would be an advantage
